Behind the Design

New Orleans may have the most recognizable and regionally distinct cuisine in the entire country, and red beans and rice has been a culinary staple in the city for generations. The Monday tradition originates from the cheap and convenient practice of using Sunday’s leftover meaty bones and letting them cook slowly with the beans for hours while other chores could be accomplished. Despite the domestic conveniences of today, the tradition persists in households across the area as well as in most local restaurants. I enjoy cooking and love a good meal so it’s a tradition I hold dear and wanted to encapsulate into one of Alon’s signature polos.
